<p>Kazuko Shimada, the spouse of ITER's scientific expert Michiya Shimada, took charge for a morning last week in the ITER kitchens to teach food service provider Sodexo how to prepare a Japanese curry, a Tamago-don, (a rice and egg dish) and Kenchin-jiru (a vegetable soup).&nbsp; </p> <p>The cooking class was part of the preparations for Japan Day, the next ITER Member Day celebrating the culture and cuisine of Japan scheduled for 4 March.</p> <p>Besides being highly instructive, the demonstration was a help in calculating the quantities of Japanese spices to be&nbsp;ordered for cooking these dishes on a very large scale. </p>
